Let's skip the speculation, these energy bites were straight up delicious. Justin and I both had long runs in the mountains planned for the weekend so I wanted to go big. Justin's mileage in particular was planned to be intense, with two 4 hour runs back to back. There were too many calories to be burned between the two of us so I wanted to mix it up with more than just PRO bars and GU. I put my game face on with these energy truffles and they turned out beautifully. The 10 minutes it took to make them bumped them on to the regular list of recipes for our weekend adventures. The ingredients are simple so make sure you use high quality, fresh products. It will make every truffle that much more delectable. Ginger Carrot Cake Energy Bites
Adapted from My Happy Place 1/4 c. coconut flakes 1/3 c. walnuts, chopped 2/3 c. oats 1/2 c. pitted dates, tightly packed 2 tbsp. pure maple syrup 1 tsp. vanilla extract 1 tsp. ground cinnamon 1 tbsp. crystallized ginger, chopped 1/4 tsp. ground ginger 2 tbsp. almond milk 1/4 c. shredded carrot {about 1 carrot} 1/4 c. golden raisins Attach the shredder to a food processor and grind the carrot. Next add the coconut flakes, nuts, and oats and pulse until well combined. Add the dates, maple syrup, vanilla, cinnamon, ginger crystals, ginger and milk. Blend until combined into a dough. Add raisins and pulse briefly. If the dough seems too wet, you may need to add a handful of coconut or oats until it becomes the texture of a cookie dough. Roll into balls with a small cookie scoop. Place in a plastic container and refrigerate. Makes about 8 large nuggets.
